Cube Steak
1 to 1 1/2 pounds cube steak, divided into four
4 tablespoons olive oil, divided
1 ½ cup finely chopped onions, celery, carrots, green pepper
1 clove garlic, minced
1 cup beef broth with red wine
Flour - enough to thicken
Worcestershire sauce to taste
1 teaspoon salt
Ground black pepper to taste
Heat 2 tablespoons of olive oil in a large heavy skillet over medium heat until hot but not smoking. Add cube steak and some flour and cook until brown. Add ½ cup beef broth, cover, and cook on high for 7 minutes. Remove steak from skillet and keep warm. Heat 2 tablespoons of olive oil. Add remaining beef broth, chopped vegetables and garlic, and cook, stirring often, until softened, about 4 minutes. Add cube steak, Worcestershire sauce, salt, and black pepper to taste. Add flour and cook until thickened. Serve immediately.
